When you’re on the go and have little time for a meal before heading to school or sending the kids off to school, skipping breakfast might be the only option.

However, with these quick five-minute healthy breakfast recipes, your day will be transformed with more energy to fuel productivity.

Cinnamon Apple Overnight Oats

Time: 5 min

Ingredients:

  • ½ cup oats
  • ½ teaspoon cinnamon
  • ½ cup milk (use your favorite option)
  • ½ cut and peeled apple
  • 1 tablespoon almond butter
  • A drizzle of honey (optional)

Instructions:

  1. Mix the oats, milk, cinnamon, almond butter, and honey together.
  2. Leave overnight.
  3. Slice half a banana on top and drizzle some honey.
  4. Enjoy!

Peanut Butter Banana Toast

Time: 5 min

Ingredients:

  • 1 slice of bread
  • 2 tablespoons peanut butter
  • ½ banana
  • ½ teaspoon cinnamon

Instructions:

  1. Toast a slice of bread in a toaster or a saucepan.
  2. Spread the peanut butter.
  3. Slice ½ banana and top onto the peanut butter.
  4. Sprinkle cinnamon on top.
  5. Enjoy!

Loaded Sweet Potato

Ingredients:

  • One sweet potato
  • ¼ cup drained black beans from can
  • ¼ sliced avocado
  • Salt and pepper for seasoning
  • Cilantro (optional)
  • Hot sauce (optional)

 

Instructions:

  1. Using a knife, make cuts in the sweet potato. Wrap sweet potato in wet paper towel and put in the microwave for 5 minutes.
  2. Meanwhile, drain ¼ cup canned black beans.
  3. Slice ¼ avocado.
  4. Wash and cut a handful of cilantro
  5. Take the sweet potato out of the microwave and place under cold water.
  6. Cut open the sweet potato in the middle and stuff with black beans and top with avocado slices.
  7. Sprinkle the salt and pepper, cilantro, and hot sauce.

Super Scramble

Time: 5 min

Ingredients:

  • 2 eggs (or ¼ pack tofu)
  • 1 tablespoon olive oil
  • Salt and pepper
  • ½ teaspoon turmeric
  • 4 bunches spring onions, trimmed, halved, and cut into small pieces
  • 1 red pepper, cut into small pieces
  • 1 slice of bread

Instructions:

  1. Scramble 2 eggs or tofu in olive oil.
  2. Sprinkle salt, pepper, and tumeric.
  3. Add in cut spring onions and red pepper pieces.
  4. Toast bread and serve scramble on top.
  5. Enjoy!
